Does matching pitch guarantee that a header and socket will mate?

No. Pin shape and dimensions, row spacing, contact arrangement and insertion depth also need to match. Confirm the intended pair before finalising the PCB footprints.

Is housing height the same as the distance between connected boards?

Do not use housing height alone as the board spacing. The assembled spacing depends on both connectors and their engagement. Confirm that dimension on the drawings for the selected pair.

What if a required rating or dimension is not listed?

Ask us to confirm it for the specific header and socket under consideration. Include the required value and both product references; do not assume that a nearby size or similar-looking part has the same specification.
